SEARCHING FOR EXCELLENCE
We are so passionate about our products that we carry out and supervise the entire process, right from the very moment when the olives are picked from the tree.
That’s because the only way to get the finest product is by being involved in every stage of the production process.
Under the watchful eye of our Quality Control Department, the olives are cleaned and milled. The oils are then classified by their quality:
• Lampante virgin olive oil
This has to go through a process of neutralisation, winterisation, bleaching, deodorisation and filtration to become refined olive oil. It is mixed with virgin olive oil to make olive oil.
• Extra Virgin Olive Oil
• Virgin Olive Oil
• Olive pomace
After milling, the ground olives still retain between 10 and 12% of their oil. Chemical extraction processes are thus used to make crude olive pomace oil. This oil then has to go through a process of neutralisation, winterisation, bleaching, deodorising and filtering to become refined olive oil, which is mixed with a range of virgin olive oils to make what is known as olive pomace oil.
